Essential Job Functions:

  • Plan menus including serving size proportions and minimum levels of caloric nutritional intake.

  • Conduct inventories as needed to insure meal preparation.

  • Maintain a "Daily Menu Substitution Log". File menus for at least the past thirty (30) days.

  • Supervise kitchen and dining room clean up.

  • Purchase food and necessary supplies within budgetary requirements.

  • Maintain compliance with all regulatory bodies (ie Health Department, CSTAR, DOA, etc.)

  • Maintain records to satisfy the requirements of the Free & Reduced Meal Program with USDA.

  • Monitor food temperatures.

  • Ensure staff evaluations are completed in a timely manner. Communicate well with staff.

  • Schedule staff for proper coverage.

  • Demonstrates interest in long term and short term goals and objectives of the company.

  • Other duties as assigned by Executive Team Members.

Knowledge, Skills, and Abilities:

  • Thorough knowledge of food preparation and cooking methods on a large-scale basis.

  • Knowledge of the materials and equipment used in large scale cooking operations.

  • Ability to communicate effectively orally and written.

  • Capable to follow security and safety regulations.

Experience and Education Qualifications:

  • Evidence of at least one (1) year of responsible employment history; AND

  • A minimum of one (1) year paid experience in food preparation; AND

  • At least one (1) year supervisory experience.

Supervisory Requirements:

  • Communicate the strategic direction of the organization and encourage participation by all associates.

  • Provide leadership and guidance to all aspects of Food Service work.

  • Take an active role in monitoring the identification, development, and execution of strategic objectives.

  • Involve, as appropriate, all associates in order to achieve goals.

  • Effectively communicate to associates any changes and news worthy events within the department or company to all associates.

  • Handle difficult personnel situations directly, using appropriate discretion and Human Resource advice to show respect for the individual

  • Champion change and effectively manage the implementation of new ideas.

  • Reinforce team approach throughout functions; support and solicit input from team members at all levels within the company.

Employment Requirements:

  • Must provide evidence that incumbent is free of infectious and contagious disease, such as TB, prior to beginning employment and annually thereafter - expected for all direct car staff, but mandatory for RCF staff.

  • Successful completion of background check including criminal record, driving record and abuse/neglect.

  • Completion of New Hire Orientation at the beginning of employment.

  • All training requirements including Relias Learning at the beginning of employment and annually thereafter.

  • Obtained Hepatitis A vaccination prior to handling food products - required for all St. Louis area staff.

  • Successful completion of ServSafe Course

Physical Requirements:

ADA Consideration - Heavy work: Exerting up to 100 pounds of force occasionally (exists up the 1/3 of the time) and/or up to 20 pounds of force frequently (exists 1/3 to 2/3 of the time) and/or a negligible amount of force constantly (exists 2/3 or more of the time) to move objects. Requires walking or standing to a significant degree, or requires sitting most of the time but entails pushing and/or pulling of arm or leg controls, or requires working at a production rate pace entailing the constant pushing and/or pulling of materials even though the weight of those materials is negligible.
